So first, a very simple problem, 'mining 1-500 with smelting' is mis-titeld, it does mining to 600.
All of your guides that use a gathering skill with a crafting skill to level both together should be taking into account your gathering skill before moving on. Let me explain.
Im doing the Engineering guide + mining. I ran around and gathered materials to get my engineering to 150, then, the guide hard stopped preventing me from progressing because my mining was only 110, stating I needed 150 in mining in order to continue forward.
The guide SHOULD be looking at my mining BEFORE I go to craft anything to level my engineering to make sure that my mining is high enough to progress AFTER I do the next crafting portion of the guide.
I also feel like I should not have to continually tell the guide that I want to gather my own materials and not buy them from the auction house.
