Why are all Gathering Professions in Eastern Kingdom?

I'm curious why all the gathering (Skinning, Mining, Herb gathering) all in Eastern Kingdoms?

Seems that most Horde setup their home base in Org.

I would like to see an option to pick one or the other continent and run the gathering from there.

The herbalism and mining guides are based on which zone has a good number of nodes to get to. While herbalism is primarily EK the mining guide for Horde does utilize both EK and Kalimdor. This is simply for speed in gathering (more nodes) and has nothing to do with faction. For both herbalism and mining the first 1-75 section is a zone appropriate for each faction (Durotar/Tirisfal Glades and Elwynn Forest) but after that zone both factions use the exact same zones for leveling the profession. As for the skinning guide, the Horde skinning guide is entirely on Kalimdor, while the Alliance guide uses both continents.
