That really depends on your server's economy and what's in demand by the players on your server.

The gathering professions like mining and herbalism normally do well on all of the servers but how much you can make will really depend on how many other players are doing those professions and what the demand for the materials are on the server.

Currently herbing/mining would probably be decent profit considering Felblight is a new resource that has a high value.

My main, a Warlock since 2004, previously had Blacksmithing/Mining as professions. When WoD dropped and everybody got a mine I dropped mining and picked up tailoring, 'cause hey, I'm a clothing. But now that 6.2 is out and you need a gathering profession to get felblight I dropped blacksmithing and picked up skinning. I am loving it. Not only does the hide sell for good gold on my server but I am getting plenty of felblight to get my WoD crafted gear upgraded in good time. Plus, when other people kill things and leave the dead bodies I can skin without effort.

Whatever you do, don't forget to fish. Getting lots of felblight from fishing as well.
