Do I have to pay for updates if MoP is launched?

We use 2 terms, updates and upgrades.

Updates are free for all guide content you currently own and is in game.

Upgrades cost a small fee and add any new game content introduced with an expansion to your existing guides.

If you decide not to upgrade your guides for an expansion your currently owned guides will still always be updated, they would just be lacking things like new zones, new races, new classes, etc. that are added to the game with an expansion.

Is this small fee for all guides I have or it will most likely be for each guide seperately?

Well, with Cata is was an upgrade fee for each guide separately. At that point we only had the Leveling and the Dailies guide packages so it wasn't really a big deal to everyone. MoP will be our first expansion that we have so many different guide products so I have no idea how it will be handled.

I currently own all of the guides including the dungeon/gear per-order so I'm really hoping for a fair and all inclusive upgrade price.
